RECIPE: END OF SUMMER FRESH FIG AND PEACH GALETTE

Summer is coming to an end, but my friend is still bringing me gorgeous figs from her trees. I’ve also been able to grab a few delicious peaches before they disappear for the season!

Here is a quick appetizer that I’m taking to a cocktail party tonight. It’s delicious and will impress your guests! You can make an easy pie crust, but I didn’t have time. So I grabbed a premade pie crust at the grocery and rolled it to the size I wanted.

You can also probably try any stone fruit instead of peaches, but I don’t recommend berries, as they are too watery.

Also, I used a combo of blue and goat cheese and added a little crumbled bacon. But feel free to experiment!

1 refrigerated pie crust (I used Pillsbury)

15 figs, stem removed and cut in half

1 ripe peach, sliced thin

1/2 cup your favorite fruity jam (I used peach habanero for a nice kick!)

1/2 cup goat cheese

1/4 cup crumbled blue cheese or gorgonzola

1 tablespoon cooked bacon, chopped (optional)

1 tablespoon fresh basil, chopped

Heat oven to 350

Roll out pie dough to an eight inch circle.

Spoon a layer of jam around the bottom circle leaving an inch around the outer edge. Crumble on goat cheese.

Arrange fruit any way you like in circle leaving that inch around the outside. 

Sprinkle with blue cheese and bacon, if you’re using.

Fold the edges up around the cheese and the fruit all the way around.

Brush the border with egg and bake 35 to 40 minutes until crust is golden brown

Sprinkle with fresh basil and enjoy!
