RECIPE: Hot and Sweet Chicken Thighs

I’m doing a little cooking challenge for myself the entire month of June. My goal is to come up with quick easy recipes for myself and my son. I love chicken thighs because they are moist and cook evenly. And these are just super TASTY!

1 1/2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 1/2 teaspoon sea salt
1 teaspoon garlic powder
1 teaspoon red pepper flakes
8 boneless, skinless chicken thighs

GLAZE

2 tablespoons hone
1 tablespoon apple cider vinegar
2 teaspoons freshly grated ginger
2 teaspoons toasted sesame seeds (white or black)

GARNISH

2 tablespoons thinly sliced green onion

Combine first six ingredients. Add chicken and mix to coat. Set aside 30 minutes if possible.

Combine ingredients for glaze and set aside.
Heat oven to broil and place rack on top third of oven.
Spread chicken on a baking sheet and broil for five minutes. Flip chicken and broil another five minutes.

Remove from oven and brush with half the glaze.
Broil one minute and flip chicken and brush with the rest of the glaze. Broil one more minute.

Garnish with thinly sliced green onions.
