This a delicious and refreshing chilled soup to whip up in the height of peach season! You can peel your peaches if you prefer, but I used the whole peach, peel and all!
10 ripe peaches, pit removed and chopped
1 tablespoon fresh ginger, grated
4 cups fresh orange juice
4 cups prosecco or champagne
1 tablespoon fresh lemon juice
dash of salt and pepper
Put all ingredients into a large pot and bring to a boil. Lower heat and simmer for 10 minutes. Remove from stove to cool. In blender or with an immersion blender, purée soup. Chill at least two hours before serving.
